Having badgered my mother for the past year for the recipe of her wonderful minestrone āMinestraā soup that she makes for me (normally if Iām poorly)...she finally succommed and wrote it out for me.

Anywayā¦I am literally copying āher instructionsā on how to make, sheās Italian if you havenāt guessed!

Minestrone (veggie)
1 onion
1 chilly chopped
2 cloves of garlic
chopped Carrots Potatoes Sweet potatoes
Celery
Spring cabbage or other Frozen peas
Tinned chopped tomatoes
Tinned best cannellini beans
Tinned best chick peas
A handful of parsley
A few French beans chopped
2 stock cubes
Salt/pepper
Put chopped onion,chilly and garlic in a large pan with some good olive oil and let it gently fry
Add chopped potatoes and Sweet potatoes
Gradually add all the other chopped vegetables
Add Tinned tomatoes, beans and chickpeas
Add stock to almost cover veggies
Add parsley and Season with salt and pepper.
Simmer for at least 1 hour stirring from time to time.
Everything should be cooked through.
Serve with parmesan and some nice sourdough bread
For non vegetarians Fry two small packs of smoked pancetta With the onions etc.
